Meal Preppping for the work week

Meal prepping for the work week is not only a great way to spend a day in the kitchen. It can make the rest of your week go smoothly. Meal planning sometimes is so hard to do, especially with last minute dinners and having the correct ingredients. When I have filled my freezer or refrigerator with a weeks worth of meals, it saves me a lot of stress and headache. I have a career that isn’t a typical nine to five job but I still can meal prep and plan my meals by the flights I am scheduled to work. It makes packing for a trip so much easier. Plus, with my partner being retired, he can simply go out to the freezer or refrigerator and pick a meal out that he wants and heat it up.

If you meal prep for the work week and have a nine to five job, Sunday could be a great day to do your meal prepping. I meal prep for my work week on my last day off before I start a trip. One day a week for five to seven meals for the week can also help keep you on track for the results you desire on your Keto journey. I find it rather enjoyable to plan a menu for the week, shop for the ingredients and then make the meals so they are ready when I want them. You can also plan out your snacks and deserts as well. Make it your own and enjoy the time you are meal prepping. During the work week you will be able to enjoy other activities.

This weeks menu for me included Egg Roll In A Bowl, which is all the ingredients you would find in an egg roll, just not the egg roll part. I find it quite delicious and filling, with great protein and fiber. This particular recipe I found off of a video on YouTube, by ruled.me https://youtu.be/z4aLLZBXWfc. Not only did I prep it for my work week, but I also had it for this evening’s meal. My partner and I both enjoyed it very much.

Keto Shrimp Fried Rice http://ketofocus.com

My second dish that I prepped for the work week was Shrimp Fried Rice. This recipe came from Keto Focus, http://ketofocus.com. I really enjoy her videos and the way she simplifies the instructions for those of us who aren’t professional cooks or chefs. This was served along with the Egg Roll in a Bowl that I prepped. It truly was a delightful dinner and very filling.

I also made Roasted Chicken Thighs in Red Pepper Sauce by ruled.me.com. Again, the recipes are simple, forgiving and easy to follow. Unfortunately I didn’t get a picture of this before I put it in the refrigerator but I promise to share it with you when I have it for dinner. Another picture I didn’t get was of my Italian Stuffed Peppers by https://youtu.be/CNxBGty895M, the diet doctor. I have actually made these before and really enjoyed them.

It’s still hard for me to fathom that I get to enjoy most, if not all, of the deserts I loved before I was on Keto. It’s important to keep on hand the foods that you crave, desire and enjoy. Remember, Keto is a lifestyle not a diet. You are eating the same foods you did before, but with different ingredients. The deserts are amazingly good and I get to eat them guilt free. In the picture above is the Chocolate Mousse I love so much. This one was served with a boxed Keto Birthday Cake when we celebrated my birthday last week. I will prep this particular desert quite frequently. I’m a sucker for chocolate.

Make meal prepping fun for yourself and your family. Use it as a time to teach your children, spouce or friends how to live this lifestyle and eat healthier.
